Pepper Salad

Here's my first dish made in Germany: A salad with curly lettuce, rucola, red and yellow bell peppers and pickled chillies, seasoned with oregano, juice of half a lemon, and olive oil.

To make, combine:
  • Half a curly lettuce head
  • Handful of rucola
  • Large handful each of chopped red and yellow bell peppers
  • 4 large pickled chillies
  • Juice of half a lemon
  • 1 teaspoon of oregano
  • 2 tablespoons of olive oil

Celery, Carrot, Lettuce, Cauliflower Salad

After long last I finally made my own lunch (almost a week)! Have been superbusy getting my visa in order, and have just been eating cooked meals at home or a plate of fruit in the office canteen. Why now? Because I was dying to try out my celery. We get orange+celery juice in many juice shops, but for some reason I've never seen celery being sold at the supermarket or veggie vendors. So, when I saw some at Nature's Basket, I immediately grabbed some!

Ingredients:
  • 3 large stalks of celery (including leaves)
  • 1/2 icebery lettuce
  • 1 red carrot
  • Handful of cauliflower florets
Dressing:
  • Juice of half a lime/lemon
  • Tablespoon of olive oil
  • 1 teaspoon madras curry powder

Banana & Lettuce Salad with a Chilli-Chocolate Dressing

Valentine's Day brings with it a whole gamut of giveaways on blogs - mostly chocolate. I even commented yesterday that chocolate has milk and hence is off-limits, in that I don't buy it myself. But if its offered to me for free, I figure its fair game. In that chocolate state of mind, this salad was born. My chocolate was not vegan, but I just used a couple of pieces, so don't have that much of a negative karma.

Kalamata Olives, Lettuce, and Green Pepper Salad

An old flame of mine used to say "If you have't eaten kalamata olives, you've wasted your life." If that is so, then today was the first day of putting my life to good use. Since the salad below has that tang from the olives and the gherkins, I just dressed it with rosemary-infused olive oil.

Papaya and Lettuce Salad

A simple salad with red/lolo lettuce, papaya and olives - dressed with red wine vinegar and chives. I think the olives ruined it for me...the next time I make this, I'd leave out my salty olives. Can't wait for mango season in April - This would taste so much better with mango!

Ingredients:
  • 1/2 a papaya
  • 5-6 cups of red/lolo lettuce
  • 2 tablespoons red wine vinegar
  • Handful of olives
  • 1 teaspoon chives
To make:
  • Peel, deseed, and dice your papaya.
  • Dress your lettuce in red wine vinegar.
  • Add the papaya and olives.
  • Sprinkle with finely chopped chive.

Strawberry, Pea, Pepper, and Lettuce Salad with a Pesto Dressing

Ingredients:
  • 10 large strawberries
  • 1 cup green peas
  • 2-3 cups lettuce
  • 1 green pepper
  • 3-4 basil leaves
  • 2 tablespoons basil walnut pesto
  • 1 tablespoon olive oil
  • Handful of sunflower seeds
To make:
  • Chop up the strawberries, peppers, and lettuce.
  • Finely chop the basil leaves and combine it with the pesto, olive oil and a couple of teaspoons of water to make a dressing.
  • Pour over the remaining ingredients.
  • Garnish with sunflower seeds.

Strawberry, Lettuce, Pak Choi, and Pepper Salad

Continuing with my theme of adding fruits to salads, here's a salad with lettuce, pak choi, peppers, strawberries, and basil.

Ingredients
  • 15 strawberries
  • 2 cups of iceberg lettuce
  • 1 green pepper
  • 1 cup pak choi
  • 3-5 leaves of basil
  • 1 tablespoon olive oil
  • 1 teaspoon dry chilli flakes
To make:
  • Chop the veggies and the strawberries fairly even.
  • Combine the veggies and strawberries.
  • Tear up the basil leaves and add on top.
  • Add the chilli flakes to the olive oil and dress the salad.

Lettuce and Pear Salad with a Quick Raspberry Vinaigrette

Am dealing with quite a bit of a blogging backlog lately - this is my dinner from Saturday night!
We get these yellow pears here, which are white on the inside have a really high water content. So, this time, I decided to have a completely sweet salad with lettuce, pears, and a raspberry vinaigrette.
I happened to have a rasberry preserve, that I liquified to make a dressing for the salad. Of course, if you are fortunate enough to get fresh rasberries, nothing like it!

Lettuce and Pear Salad

Ingredients:
  • 2-3 cups of chopped iceberg lettuce
  • 1 pear, chopped
  • 2-3 tablespoons of rasberry preserve
To make:
  • Chop the iceberg lettuce into medium sized long strips, and the pear into bite sized chunks.
  • Add a couple of tablespoons of water to the rasberry preserve to make it more liquid.
  • Dress the salad with the rasberry dressing.

Lettuce, Grape, Almond and Basil Salad

As far as salads go, this one is a keeper, as far as I am concerned. Real easy to put together (but so are all my salads!) and yummy enough to polish off an entire bowl in one sitting.

Ingredients:
  • 3-4 cups of loosely packed iceberg lettuce
  • 2 cups green grapes
  • 5-7 leaves of basil
  • 12-15 almonds
  • About a handful of sunflower seeds
  • Dash of olive oil
To make:
  • Tear up the lettuce and basil.
  • Combine all ingredients except the oil and sunflower seeds.
  • Drizzle with olive oil.
  • Top off with the sunflower seeds.
