Apple and Cabbage Salad

A delightfully tart apple and cabbage salad dressed with red wine vinegar and chives, and a sprinkling of black grapes with some leftover peppers.

Ingredients:

  • 1 tart apple (I used Granny Smith)
  • 2 cups of shredded cabbage
  • 1 cup black grapes
  • 1/2 red and green peppers
  • 1 1/2 tablespoons of red wine vinegar
  • 1 teaspoon chives
To make:
  • Chop your apple and cabbage. I soaked my apples in lime juice so that it doesn't go brown.
  • Dress the cabbage with the red wine vinegar.
  • Add to the apple, grapes and peppers.
  • Finish off with a dash of finely chopped chives.

Fig, Apple, and Roquette Salad

I had this for lunch yesterday. One tip though - any dressing with maple syrup should be added right before you are about to eat your salad or your salad leaves start to wilt. My salad was fine for about 4 hours, but by 7 hours, it was begging for mercy.
Ingredients:
  • 2-3 cups of roquette lettuce/arugula
  • 2-3 figs
  • 1/2 an apple
  • 1 cup of red and green peppers
Dressing
  • 1 tablespoon olive oil
  • 2 tablespoons of maple syrup
  • Teaspoon of fresh rosemary, finely chopped
  • Half a teaspoon of sumac powder
To make:
Chop the veggies and fruits into bite sized morsels.
Combine in a bowl.
Make a salad dressing with the dressing ingredients.
Pour over the salad when you want to eat the salad.

Lettuce, Apple, and Cucumber Salad

Inspired by my salad yesterday, today, too, I made a salad with hitherto unused ingredients - apples and cucumbers. You can prevent apples from going brown after you cut them by rubbing some lemon/lime juice on them.

Lettuce, Apple, and Cucumber Salad

Ingredients:
  • 2 cups iceberg lettuce, chopped finely
  • 1/2 a large apple, chopped
  • 1 cucumber, sliced (skin on)
  • 2 tablespoons black olives, chopped
  • Handful of mint
  • Tablespoon of olive oil
  • Juice of two limes
  • Handful of fennel leaves
  • Handful of walnuts
To make:
  • Chop and mix all the veggies.
  • Juice the two limes - The juice of one of them will be poured over the chopped apples to prevent them from going brown.
  • The juice of the other lime will be combined with the olive oil to make a dressing.
  • Pour over the salad.
  • Garnish with walnuts, mint and fennel leaves.
