Piquant Pineapple Salsa

The post title may say "salsa" but I'm having this for lunch as a salad. Very simple recipe with pineapple, cucumber, onion. The veggies are dressed in red wine vinegar, liquid jaggery, chilli flakes, basil, and garlic.

Piquant Pineapple Salsa

Ingredients:
  • 1/2 pineapple
  • 1/2 cucumber
  • 1/2 red onion (or 1 spring onion)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon liquid jaggery (or honey)
  • 2 teaspoons red chilli flakes
  • 1 garlic clove
  • 3 basil leaves
  • Sprinkling of coriander
  • Dash of olive oil
To make:
Chop your onion, basil, and garlic finely. Peel your cucumber and dice the cucumber and pineapple in roughly the same size.

Mix the pineapple, onion, and cucumber in a bowl.

Combine the vinegar, liquid jaggery, chopped basil and garlic, and the chilli flakes.

Drizzle over the pineapple mixture.

Mix well. Add a dash of olive oil on top. Leave in the refrigerator to marinate for an hour.

Garnish with coriander leaves, finely chopped, when serving.

  6. I love pineapple and I have one in my fruit bowl so this looks like a lovely salad/salsa to try. I think I will add some fresh mint as well as the coriander, as I have some, for extra freshness, thanks!!

  9. ahh i make something really similar! except i have cilantro (instead of basil) and lime juice, salt, and pepper. i love fresh pineapple salsa!
